Sugar-free cheesecake
This is one of my original recipes. I live with a diabetic who loves sweets! This one is very safe for everybody. Ingredients
- 4 pkgs cream cheese, softened
- 3 eggs, at room temperature
- 1 1/8 tsp vanilla
- 1/3 + 1/4 c. fructose
- 1 c. sour cream
- 1 1/2 c. graham cracker crumbs
- 1 stick butter, melted
Directions
- CRUST: Combine graham cracker crumbs and butter to a "wet sand" consistency. Press into bottom of a 9" springform pan.
- FILLING: Combine cream cheese and fructose. Beat until smooth.
- Add vanilla and sour cream. Blend well.
- Add eggs, one at a time, beating well after each addition.
- Pour into prepared crust.
- Bake in preheated 350 degree oven for 40 - 45 minutes or until top is golden. Let cool for 1 hour. Refrigerate at least 6 hours before serving.
