    Ingredients

    • 1 cup butter, softened
    • 1 cup sugar
    • 1 egg, separated
    • 1/2 tsp vanilla
    • 2 cups flour
    • 1/2 tsp cinnamon
    • 1/8 tsp salt
    • 1/2 cup chopped pecans

    Directions

    1. Blend the butter and sugar
    2. Add the egg yolk and vanilla
    3. Mix well
    4. Set aside
    5. Combine the flour, cinnamon, and salt
    6. Gradually add to the butter mixture
    7. Spread the dough in a greased 15 x 10 jelly-roll pan
    8. Cover with plastic wrap
    9. Press evenly into the prepared pan
    10. Remove the plastic wrap and set aside
    11. Beat the egg white until frothy
    12. Brush over the dough
    13. Sprinkle with the pecans
    14. Bake at 300 F for 30 minutes
    15. Cut into 1 1/2 inch diamond shapes while still warm
