Sue's Baked Apples

Trying to be healthy I spent hours looking online for a healthy version of a baked apple a little more than just an apple with cinnamon on it. I found NONE! So I created my own! This recipe has a slight sweetness to it so it feels like a treat but not so sticky sweet like a most recipes. Dessert or snack?? I say EITHER ONE!! This recipe killed my apple pie craving many times.

Ingredients

  • 6 Apples
  • ¼ cup Oats, old fashioned
  • 2 tbsp light brown sugar
  • 1 ½ tsp cinnamon (reserve ½ tsp)
  • ¼ tsp nutmeg
  • ½ cup hot water, from faucet

Directions

  1. In small bowl mix oats, brown sugar, only 1 tsp cinnamon and nutmeg with fork and set aside.
  2. Core each apple leaving about ½ “ at bottom. Place in baking dish, spacing evenly.
  3. Spoon 1 tbsp of filling mixture in to each apple.
  4. Place reserved ½ tsp of cinnamon in liquid measuring cup and fill with 1/2 cup hot water. Pour cinnamon water over each apple letting it moisten the filling. Pour the rest of water in bottom of baking dish.
  5. Bake in 350 degree oven uncovered for 40 - 50 minutes until tender when pierced with fork.
