  • Stuffed Pepper Soup with Cheese

    Ingredients

    • 1 lb lean ground beef
    • 1/4 lb diced onions
    • 3 Tbsp olive oil
    • 2 qt beef stock (low or reduced sodium)
    • 2 Tbsp Worcestershire sauce
    • 2 Tbsp ketchup
    • 1/2 cup raw rice
    • 1 tsp each of oregano
    • 1 tsp basil
    • 1 tsp thyme
    • 1 tsp garlic
    • 1 tsp sugar
    • 1 tsp salt
    • 1 tsp black pepper
    • 1 cup diced tomatoes
    • 1/2 cup tomato paste or sauce
    • 4 large diced green pepper
    • 1/2 cup parmesan cheese
    • 1/2 to 3/4 cup mozzarella or jack cheese.

    Directions

    1. Saute onions in olive oil until translucent. Add beef and cook until done. Break beef into small pieces. Drain oil.
    2. Bring to a boil the next 13 ingredients (beef stock through tomato paste/sauce). Simmer until rice is cooked. Add beef and onion.
    3. Add pepper. Simmer 1/2 hour.
    4. Add parmesan, simmer another 5 minutes.
    5. Add mozzarella or jack cheese, and stir into soup so it does not settle.
    6. Adjust seasoning.
