Ingredients

  • 1Lb Ground Beef- lean
  • 1/4 Lb diced onions
  • 3 Tablespoons Olive Oil
  • 2 Qt. beef stock
  • 2 Tbs. Worchestershire sauce
  • 2 Tbs. Ketchup
  • 1/2 cup- raw rice
  • 1 Teaspoon Oregano
  • 1 Teaspoon Basil
  • 1 Teaspoon Thyme
  • 1 Teaspoon Garlic
  • 1 Teaspoon Sugar
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Cup diced tomatoes
  • 1/2 cup tomato paste or sauce
  • 4 large diced green or red pepper
  • 1/2 Cup Parmesan Cheese
  • 3/4 Cup of Mozzarella Cheese

Directions

  1. Saute onions in olive oil until translucent.
  2. Add beef and cook until done.
  3. Break the beef into small pieces.
  4. Drain the oil.
  5. Add beek stock, worchestershire sauce, ketchup, raw rice, seasonings, tomatoes,and tomato paste in a pot.
  6. Bring to a boil, simmer until rice is cooked.
  7. Add beef and onion.
  8. Add green pepper, simmer for half hour.
  9. Add Parmesan cheese, simmer for another 5 minutes.
  10. Add mozzarella cheese stir into soup so it does not settle to the bottom.
  11. Adjust seasoning and enjoy!
