    Onions stuffed with mushrooms and cheese sauce

    Ingredients

    • 6 whole medium onions, peeled
    • 1 tbsp butter
    • 150 g mushrooms, sliced
    • 2 tbsp bread crumbs
    • 1 tbsp melted butter
    • 2 tbsp thick cream
    • 1/2 cup grated cheddar cheese
    • Salt and pepper
    • 1 1/4 cup white sauce

    Directions

    1. Preheat the oven to 200*c/380*F
    2. Insert the onions in a saucepan with boiling water, cook 20 minutes
    3. Drain
    4. Carefully remove the centres to create onion shells
    5. Finely chop the centres
    6. Saute the mushrooms and chopped onion in the butter
    7. Mix the bread crumbs with the melted butter, keep aside
    8. In a deep bowl, lightly combine the sauted onion mixture,
    9. white sauce, cream,salt and pepper and half the cheese
    10. Fill the onion shells and place in a greased ovenproof dish
    11. Combine the crumbs and the remaining cheese and sprinkle over the onions
    12. Bake in the oven for approximately 20 minutes
