Stuffed Mash Potatoes Balls
Prep: 20 min Cook: 10 min Servings: 10by Javier1 recipe>This is my recipe for an appetizer or meal (depending on size) called Mash Potato Balls. There's so many ways that you can dress it and fill them. From a combination of vegetables, broccoli & cheese with cilantro, and even pastry type entrees. Ingredients
- 1 box of Hungry Jack mash potatoes
- 1 pound choice of meat
- 1/2 pound of cheddar cheese
- 1 bush of cilantro
- 1 parsley bush
- 1 tablespoon of black pepper
- 1 green pepper
- 1 red pepper
- 1/4 pound of green olives stuffed with red peppers
- 2 tablespoons of fresh crushed garlic
- 6 eggs
- 1 teaspoon of onion powder
- 1 teaspoon of garlic salt
Directions
- First this is to make the mash potatoes. Follow the Hungry Jack directions for making 12 servings but shorten the water called for by 25%.You want the potatoes to cool down because you will be rolling the balls. Place the mash potatoes in a bowl and then in the freezer before starting your next task.
- Place items into wok or big skillet;
- 1 pound choice of meat
- 1 bush of cilantro
- 1 parsley bush
- 1 tablespoon of black pepper
- 1 green pepper
- 1 red pepper
- 1/4 pound of green olives stuffed with red peppers
- 2 tablespoons of fresh crushed garlic
- Cook all together as you would regularly cook your meat. Once done turn off stove and let the contents cool down. Place flour on a clean dry counter top. Go get the mash potatoes out the freezer and dip your hands in some flour. You roll out the mash potatoes like doll until about a 1/4 in thick. With a small plate as your guide for size, cut around the edges until a complete circle. Within each circle you place 3-4 table spoon of your meat and vegetables and then close the wrap to a circle.
- Beat eggs and combine with onion powder, black pepper and garlic salt. Dip the potato balls into eggs and then deep fry until golden.
