Streuseled Sweet Potato Casserole

I didn't want a marshmallow topping so this was a perfect recipe.

Ingredients

  • 5 lbs of sweet potatos, peeled and cubed
  • 1/2 cup fat free half and half milk
  • 1/2 cup maple syrup
  • 2 tsps vanilla extract
  • 3/4 tsp salt
  • 1 lrg egg, lightly beaten
  • 1/2 cup all purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup chilled butter, cut into small pieces
  • 1/2 cup pecans, chopped
  • cooking spray

Directions

1. Place sweet potatoes in water to cover, bring to boil and reduce heat to simmer. Cook 12 minutes or until tenter. Drain
2. Preheat oven to 375 degrees. Wisk together half and half and next 4 ingredients (milk thru egg). Add potatoes and beat with a mixer on medium speed until smooth.
3. Spoon mixture into a 13 x 9 baking pan that's been coated with cooking spray.
4. Combine flour and suger in food processor or blender. Pulse to combine, add butter and continue to pulse until pea sized crumbles form.
5. Stir in pecans and sprinkle mixture over potato mixture.
6. Cover and bake for 15 minutes. Uncover and bake 25 minutes until topping has browned and potatoes are heated through.
