Streusel Topped Sweet Potato Casserole

Ingredients

  • 3 pound unpeeled sweet potatoes
  • 1/2 c. plus 1 T unsweetened orange juice, divided
  • 3 T brandy
  • 1 teaspoon butter flavoring
  • 1 teaspoon grated orange rind
  • 1/4 teaspoon grnd ginger
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 egg whites
  • 1/3 c. firmly packed brown sugar
  • 1/2 c. toasted minced pecans
  • 1/4 c. brown sugar
  • 3 T flour
  • 1 teaspoon cinnamon
  • 1 1/4 c. minced unpeeled Rome apples
  • 1 T melted butter

Directions

  1. Cook sweet potatoes in boiling water 20 min till tender. Let cool; peel and mash. Put together potatoes, 1/2 cup orange juice, and next 6 ingredients in large bowl.Beat the egg whites till soft peaks. Add in 1/3 cup brown sugar, one tbsp at a time, beating till stiff peaks form. Gently stir 1/4 egg whites into sweet potatoes. Then fold remaining egg whites into potatoes. Put into 2-quart greased casserole.
  2. Put together pecans and next 3 ingredients. Put together apple and remaining 1 tbsp orange juice, add in to pecans and stir. Drizzle butter over apple mix. Spoon over sweet potatoes. Bake at 350 degrees for 30 min. Let stand 10 min before serving.
