    Freshly baked shortcake served with fresh strawberries is a luscious ending to dinner OR serve it with tea for a midafternoon snack

    Ingredients

    • For shortcake:
    • 2 cups flour
    • 3 teaspoons baking powder
    • 1/2 teaspoon salt
    • 2 1/2 tablespoons granulated sugar
    • 3/4 cup oil
    • 2/3 cup milk
    • 1 quart of fresh strawberries hulled, cored, and sliced. Sprinkle 2 tablespoons of sugar over the strawberries to sweeten .
    • Optional: half and half cream

    Directions

    1. Stir the dry ingredients together until blended.
    2. Mix the oil and mil and add to the dry mixture, stirring well until blended
    3. Divide into 4 cakes
    4. Preheat the oven to 450 degrees and bake the cakes on ungreased cookie sheet for 10-12 minutes.
    5. Top the cakes with the sliced sweetened strawberries. If desired, serve half and half cream
