  • Strawberry Parfait (Low Fat)

    Ingredients

    • 2 c. Nonfat lowfat milk
    • 1/4 c. Nonfat powdered lowfat milk
    • 1/3 c. Granulated sugar
    • 3 Tbsp. Cornstarch
    • 1/2 tsp Vanilla
    • 2 c. Strawberries
    • 2 Tbsp. Confectioners sugar
    • 24 x Strawberries, hulled and sliced, (about 3 c.)

    Directions

    1. Bring lowfat milk, powdered lowfat milk, sugar and cornstarch to boiling in saucepan over low heat, stirring constantly, till thickened, 15 to 20 min; then boil 30 seconds. Remove from heat. Add in vanilla. Strain into bowl. Place plastic wrap directly on surface of custard. Chill till chilled and hard, about 30 min. Prepare coulis: Puree strawberries and sugar in blender or possibly food processor. In parfait glasses or possibly custard c., alternate layers of pudding, coulis and sliced berries. Chill.
