  • Strawberry Mousse Cake

    Ingredients

    • 1 round prepared angel food cake
    • 1 env. unflavored gelatin
    • 1/2 c. cool water
    • 1 c. crushed strawberries
    • 2 egg whites
    • 1/2 c. sugar
    • 1 c. whipping cream, whipped
    • 2 teaspoon lemon juice
    • 1 teaspoon unflavored gelatin
    • 1/4 c. cool water
    • 1 1/2 c. whipping cream
    • 1 T powdered sugar
    • Fresh, whole strawberries

    Directions

    1. For filling soften gelatin in cold water. Place over low heat, stirring till dissolved. Stir in strawberries. Refrigerate till slightly thickened. Beat egg whites. Add in sugar. Beat till stiff peaks form. Mix in strawberry mix and whipped cream and lemon juice. Cut down into cake 1" on both sides. Carefully hollow out cake, leaving 1" base. Fill with strawberry mix. Chill till set.For frosting heat water and gelatin till dissolved. Whip cream till stiff. Add in sugar and gelatin. Frost cake. Chill. Garnish with fresh strawberries.
