Strawberry Mango Jam

With plenty of fresh strawberries on hand it seemed like jam making was in order. AND with my love of tropical fruit I couldn’t help but want to adjust the recipe that I found on Domino Sugar’s site to include mango. It was the first time I made this and it will not be the last. Easy, easy, easy and sooooo tasty.

Ingredients

  • 1 lb fresh strawberries, hulled
  • 1 lb fresh mango chunks
  • 2 oz lemon juice
  • 1 11.75 oz bottle liquid sweetener (not artificial)

Directions

  1. Mash fruit well in a large bowl.
  2. Put all ingredients in a large pot over medium and bring to a boil.
  3. Reduce to a simmer and simmer 1 hour until well thickened stirring occastionally.
  4. Store in the fridge tightly covered for up to 1 month or can traditionally can.
  5. Yield: 2 Cups jam
