Strawberry Jicama Salsa

What I had on hand resulted in a different salsa that I used with grilled Mojo chicken breasts and baked plantains. It is quick and easy to make. Refrigerate for a couple of hours so the flavors can meld. Ingredients
- 1 oz red onion, minced
- 2 Tbs fresh lime juice
- 3 oz peeled, diced jicama
- 6 oz avocado (1 large) diced
- 9 oz fresh strawberries, cleaned and diced
- 1/2 tsp ground pasilla pepper
- 1 ea jalapeno pepper, minced (or more to taste)
- 3/4 cup minced cilantro
- salt/garlic pepper to taste
Directions
- Combine all the salsa ingredients except the avocado and chill covered for a couple hours so the flavors can meld. Combine the diced avocado just before serving.
