Steamed Rice & Veggies

- 1 cup uncooked white rice
- 2 cups water
- 1 broccoli stalk
- 2 carrots
- 1 onion
- 1 tomato
- salt & pepper to taste
Directions
- Place rice and water in bottom of steamer
- Remove thick part of broccoli stalk and separate florets with a sharp knife
- Peel and slice carrots on the diagonal in thin slices
- Peel onion and cut in half, lay flat sides down on cutting board and quarter each.
- Cut tomato in half, rinse under cold water to remove juicy part and seeds, then quarter each section
- Place vegetables in steamer basket
- Place lid on steamer
- Bring water to a boil, then reduce heat and cook for 12 - 14 minutes or until rice and vegetables are tender
- Serve with soy sauce and/or chili sauce
