This recipe featured on the Hairy Bikers TV
program I thought it might interest members as it is a regional speciality in the UK and not well known but is very delicious.

Goes Well With: cheddar cheese and crispy bacon

Ingredients

  • Fine oatmeal 225 grams
  • wholemeal flour 100 grams
  • plain flour 100 grams
  • salt 5 grams
  • sugar 5 grams
  • dried yeast 15 grams ( 1 tbsp )
  • luke warm water 450 grams
  • vegetable oil 15 grams

Directions

  1. use 15 grams luke warm water and add yeast and sugar leave until frothy. Sieve flour and salt together add oatmeal using a wooded spoon beat in the remainder of the water to form a batter. cover with a warm damp cloth and leave for 1 hour. oil the frying pan at high heat drain and sprinkle with salt and wipe clean pour a ladle of the mix into the pan and cook as for pancakes
  2. turning over when the first side is cooked. top with grated cheddar cheese and crispy rasher of bacon roll up and enjoy. further filling canbe used sausage, egg, beans, tomato, chili con carne, chicken tikka vegetable curries and what ever takes your fancy
