Split Lentil Cookies

- •1 cup red split lentils cooked till almost dry and mashed
- •1 stick butter about ½ cup, soften
- •1 cup raw (brown) sugar
- •1 cup whole wheat flour sifted
- •1 cup white chocolate morsels or regular chocolate chips
- •½ cup shelled pistachios or halved walnuts
- •½ cup sunflower seeds
- •½ cup pumpkin seeds
- •1 tsp baking powder
- •½ tsp baking soda
- •1 tsp vanilla extract
- •¼ tsp salt, if butter is unsalted
Directions
- Preheat the oven to 350 degree F. Line the cookie pan with non stick parchment paper.
- Boil the lentils till they are cooked and slightly dry or strain the lentils if you are left with a lot of water after its cooked.
- In a mixing bowl cream the sugar, vanilla and butter. The add the mashed lentils and mix well, the batter should be creamy.
- Add the sifted dry ingredients (flour, salt, baking powder, soda) to the wet mixture. Stir in the pistachios, seeds and white chocolate morsels.
- Spoon about two tablespoon and drop them on the cookie pan. Making sure there is adequate space between the cookies.
- Place the tray in the oven and bake for 12-15 minutes, keep checking after the 12 minute mark.
- Let the cookies cool before serving
- If you like the cookies chewy pull them out at 10-12 minutes, if you like them crunchy 15 minutes should be good.
