    Healthy cookies at least for cookies. Made with split red lentils. lots of seeds, nuts and white chocolate.

    Ingredients

    • •1 cup red split lentils cooked till almost dry and mashed
    • •1 stick butter about ½ cup, soften
    • •1 cup raw (brown) sugar
    • •1 cup whole wheat flour sifted
    • •1 cup white chocolate morsels or regular chocolate chips
    • •½ cup shelled pistachios or halved walnuts
    • •½ cup sunflower seeds
    • •½ cup pumpkin seeds
    • •1 tsp baking powder
    • •½ tsp baking soda
    • •1 tsp vanilla extract
    • •¼ tsp salt, if butter is unsalted

    Directions

    1. Preheat the oven to 350 degree F. Line the cookie pan with non stick parchment paper.
    2. Boil the lentils till they are cooked and slightly dry or strain the lentils if you are left with a lot of water after its cooked.
    3. In a mixing bowl cream the sugar, vanilla and butter. The add the mashed lentils and mix well, the batter should be creamy.
    4. Add the sifted dry ingredients (flour, salt, baking powder, soda) to the wet mixture. Stir in the pistachios, seeds and white chocolate morsels.
    5. Spoon about two tablespoon and drop them on the cookie pan. Making sure there is adequate space between the cookies.
    6. Place the tray in the oven and bake for 12-15 minutes, keep checking after the 12 minute mark.
    7. Let the cookies cool before serving
    8. If you like the cookies chewy pull them out at 10-12 minutes, if you like them crunchy 15 minutes should be good.
