Creamy, crunchy, spicy and sweet, this salad covers all the flavor bases and provides a wonderful base for the linked Ginger Sesame Salmon recipe. It's beautiful too.

    Ingredients

    • 10 ounces fresh spinach (1 bag)
    • 1 cup cucumber, seeded and diced
    • 1 cup avocado diced
    • 1/2 cup orange segments
    • 1/4 cup sliced radishes
    • 1/2 cup sliced almonds, toasted
    • 1/3 cup marinade reserved from Grilled Ginger Sesame Salmon (linked below)

    Directions

    1. Combine spinach, cucumber, avocado, orange segments, and radishes for the salad in a bowl. Toss ingredients well. Pour reserved 1/3 cup marinade from Ginger Sesame Salmon over salad ingredients as a vinaigrette. Garnish salad with almonds.

Very good - I did enjoy the texture and flavor combinations of this salad. I also tried green leaf lettuce in place of the spinach and it works well too. I have also rated the Ginger Sesame Salmon recipe linked to this.

Well, I couldn't find this link yesterday so as soon as I asked for help finding it, there it was. I guess my eyes must have been tired yesterday. So John, disregard my question, I found it.

My fault...I got tired and went to bed before posting the spinach salad. Good catch Lorrie!
