  • spinach ricotta pie

    Ingredients

    • 2 tbs olive oil
    • 1 onion, diced1
    • 0 oz package frozen chopped spinach, thawed, and squeezed dry
    • 15 oz part skim ricotta cheese
    • 2 cups grated mozzarella cheese
    • 1 cup grated parmesan cheese
    • 6 eggs, beaten
    • 1 & 1/2 tsp salt
    • 1/2 tsp freshly ground black pepper
    • 1/4 tsp ground cayenne pepper
    • 1/4 tsp ground nutmeg
    • deep dish pie crust

    Directions

    1. In a skillet over medium heat add the olive oil. Saute the onion and garlic until tender. Add the spinach, salt, pepper, cayenne pepper, and nutmeg. Saute until all the liquid from the spinach is evaporated. In a bowl mix together mozzarella, parmesan cheese, and eggs. Fold in the spinach mixture. Then spoon into a deep dish pie crust. Bake at 350 degrees for about 45 to 50 minutes or until the center is set. Let cool 10 minutes before cutting.
