Spinach Pesto Pasta
Now that the weather is getting better, we want to spend more time in the outdoors with friends and family.
Well, I found one recipe that is delicious, as well as easy and healthy; not time-consuming at all--far from it. I found it in a newsletter that my husband receives at home periodically. The minute I saw it, I knew I had to make it. Of course, being the cook that I am, I had to tweak it just a little.
Directions
Cook pasta as directed on package.
Meanwhile, prepare the pesto sauce as follows: In a food processor, combine the olive oil, garlic, spinach, basil, grated cheese, pine nuts and chicken broth. Process ingredients to form a sauce. Set aside.
By now the pasta should be done. Drain and place in a large mixing bowl.
Pour sauce over pasta. Mix well until pasta is well coated.
Add beans, chopped peppers and onions. Sprinkle the black pepper and lightly toss.
