Spinach and Zucchini Saute.
I grow alot of my own vegetables during the summer months. I was lucky enough to have a husband who enjoy the taste to fresh vegetables, so he built me a green house. I discovered this one night just by accident and it's become one of our favorite dishes. Ingredients
- 1 bunch of spinach or swiss chard or beet greens or combination
- 1 6" zuchinni
- 2 cloves garlic
- 1 tbsp olive oil
- parmesan cheese
Directions
- Break up spincah/combination into bite size pieces. Slice zucchinni into bite size pieces.
- Mince garlic, put the tbsp of olive oil in a skillet and heat. Add zuchinni and stir fry until it just begins ot become crisp tender. Add spinach / mixture to the pan and continue to stir fry about 3 minutes, just until the spinach begins to wilt. Add garlic and stir fry for about a minute. Sprinkle with parmesan cheese and cook until zucchini is tender and spinach./combinations is wilted.
