Spinach and Feta Stuffed Chicken

- Chicken. I used scalopini I bought at the store and just folded it around the mix, you could also split a full breast and stuff them, or you could even use thighs if you prefer. You need 4 of whatever you decide.
- 3/4 cup crumbled feta
- 1/2 cup thawed frozen chopped spinach, squeezed dry (or you could use fresh, chopped well)
- 3 tablespoons cream cheese, room temperature
- 1/4 cup chopped green onions
- 1 T minced garlic
- olive oil
- salt and pepper
Directions
- Mix together the feta, spinach, cream cheese.
- Stir in the green onions, garlic and salt and pepper to taste.
- Split the mix evenly between the 4 pieces of chicken and stuff or fold accordingly.
- Season the outside with salt and pepper.
- Heat a few tablespoons of olive oil in a skillet.
- Brown the outside for a few minutes on each side and finish in the oven.
- The cooking time will vary depending on which style of chicken you use. Make sure the center of the thickest part of the chicken is measuring at least 165 on a thermometer before serving.
