Spinach And Apple Salad With Bacon Dressing
Ingredients
- 10 ounce Fresh spinach, torn in bite sized pcs
- 4 slc Bacon
- 1 Tbsp. Vegetable oil
- 1 sm Onion, diced
- 2 Tbsp. Cider vinegar
- 1 tsp Brown mustard
- 1/2 tsp Sugar
- 1/4 tsp Salt
- 1/8 tsp Pepper
- 1 x Apple, cored and thinly sliced
Directions
- Place spinach in large bowl. Cook bacon in large skillet over medium high heat till crisp. Remove to paper toweling to drain. Throw away all but 3 Tbsp. drippings from skillet. Add in oil to drippings in skillet and heat. Add in onion; cook till tender, about 3 min. Stir in vinegar, mustard, sugar, salt and pepper. Bring to boiling. Remove from heat. Add in apple to spinach. Pour warm dressing over spinach and apple; toss well to coat. Crumble bacon and sprinkle over salad. Serve immediately.
