Spicy Tuna With Potatoes

- 1 can tuna (about 200g) - drain off oil/water.
- 1 large potato (about 250g) - remove skin and sliced into thin squares.
- Spices - 1 cinnamon, 2 cloves and 1 star anise
- 1 tbsp fish curry powder
- 1 large red onion - sliced thinly
- 1/4 tsp garam masala/all spice powder
- 3-4 sprigs mint leaves (can replace with curry leaves)
- Oil as needed
- Salt for taste
Directions
- Add salt to potatoes and deep fry.
- Remove and keep aside.
- Leave about 2 tbsp of oil in the same pan.
- Sauté onion and spices.
- Add curry powder and garam masala and quickly stir.
- Put in tuna and season with salt.
- Continue to stir/scramble for about 3-4 mins.
- Lastly add fried potatoes and mint leaves.
- Another few stirs and remove from heat.
