Ingredients

  • 2-3 large tuna steaks finely diced (cut small, then slice through again to almost “mince”)
  • Half a packet of fresh coriander, diced small
  • 1 egg, beaten
  • Chilli flakes, to taste (about half a dessert spoon)
  • Half a cup of fresh breadcrumbs (grate bread on large holes of a grater)
  • Juice of half a lime
  • Salt and freshly ground black pepper
  • 3 spring onions, finely chopped

Directions

  1. Combine all the ingredients, except the breadcrumbs, in a bowl, by hand. Once everything is mixed together, add the breadcrumbs. Bind in the breadcrumbs and then scoop out a handful, squeezing and pressing into a burger or rissole shape. Should make 4-6 burgers.
  2. Place the burgers on a lightly-oiled baking tray and put in the middle of the oven at 220 degrees (electricity setting – on gas, a medium – mid-high temperature). Cook for 15 minutes and then turn them over and replace in the oven for a further 15 – 20 minutes. Turn the cooker off and leave to ‘rest’ for 5 minutes in the oven. Serve with salad, chips, new potato salad or rice, pasta or even baked beans! Very good with ketchup or HP sauce.
