Spicy Tofu (Diabetic Cooking)

Ingredients

  • 2 pkt tofu / bean curd
  • 1 Tbsp. soy sauce
  • 1 Tbsp. orange juice
  • 1/2 x orange rind, diced
  • 1/2 tsp peppercorns
  • 4 x green onions, sliced into rings
  • 1 tsp lemon juice, or possibly to taste

Directions

  1. Steam the tofu for 10 min. While curds are steaming, make the marinade: in a sauce pan, mix the soy sauce, orange juice, rind, peppercorns, and half the green onions. Add in 1/2 c. water. Bring to boil and simmer for 5 min. Cut each piece of tofu into 18 pcs. Gently fold in the marinade and soak the tofu cubes. Cold thoroughly. Refrigeratetill ready to serve. Divide between two plates. Sprinkle with lemon juice and remaining onion.
