    One of my favorites to cook and share with my folks!

    Ingredients

    • 1/2 kilo pork, cut into small cubes
    • 1/4 kilo pork liver, cut into small cube
    • 2 med potatoes, peeled, cut in small cubes
    • 2 med carrots, peeled cut into cubes
    • 1 green and 1 red bell pepper, sliced
    • 1/2 tsp paprika
    • 2 cups pork stock
    • 3 tbsp Canola oil
    • 1 tbsp atsuete oil (optional)
    • 3 cloves garlic, minced
    • 3 tomatoes, diced
    • 1 med onion, diced
    • 1/2 cup tomato sauce
    • 2 tsp cornstarch diluted in 1/4 cup water (optional)

    Directions

    1. Heat cooking oil and atsuete oil in a deep pot.
    2. Saute garlic, onion, and tomatoes.
    3. Add the pork, stir fry for a few minutes then add the bell peppers.
    4. When the pork changes its color, asd the stock.
    5. Let it simmer while stirring every now and then.
    6. Add the potatoes, carrots, and liver.
    7. Bring to a heavy boil then stir.
    8. Lower the heat and let it simmer, slowly cooking the mixture.
    9. Add the tomato sauce, adjust the taste and simmer until the stock lessens.
    10. Add the cornstarch to thicken the sauce if needed.
    11. When you reached the amount of sauce desired, turn off heat.
    12. Serve with steamed rice.
