Spicy Menudo Homestyle

- 1/2 kilo pork, cut into small cubes
- 1/4 kilo pork liver, cut into small cube
- 2 med potatoes, peeled, cut in small cubes
- 2 med carrots, peeled cut into cubes
- 1 green and 1 red bell pepper, sliced
- 1/2 tsp paprika
- 2 cups pork stock
- 3 tbsp Canola oil
- 1 tbsp atsuete oil (optional)
- 3 cloves garlic, minced
- 3 tomatoes, diced
- 1 med onion, diced
- 1/2 cup tomato sauce
- 2 tsp cornstarch diluted in 1/4 cup water (optional)
Directions
- Heat cooking oil and atsuete oil in a deep pot.
- Saute garlic, onion, and tomatoes.
- Add the pork, stir fry for a few minutes then add the bell peppers.
- When the pork changes its color, asd the stock.
- Let it simmer while stirring every now and then.
- Add the potatoes, carrots, and liver.
- Bring to a heavy boil then stir.
- Lower the heat and let it simmer, slowly cooking the mixture.
- Add the tomato sauce, adjust the taste and simmer until the stock lessens.
- Add the cornstarch to thicken the sauce if needed.
- When you reached the amount of sauce desired, turn off heat.
- Serve with steamed rice.
