Spicy Italian Sausage & Zucchini Stew

  • 2 Links Hot Italian Sausage
  • 3 Roma Tomatoes
  • one small zucchini
  • one small onion
  • one bay leaf
  • one teaspoon oregano
  • one teaspoon basil
  • one teaspoon crushed red peppers
  • cracked black pepper, to taste
  • 1 cup Vegetable Stock (low sodium)
  • 2 tablespoons Tomato paste


  1. Remove Hot Italian Sausage from casings and saute in olive oil, add onion, and cook until onions are soft and sausage is cooked through transfer to a stock/soup pot
  2. Cut roma tomatoes in quarters, add vegetable stock, tomato paste, all spices, cut zucchini in half and slice, stir well on medium heat. Cook covered for 15 minutes on medium high heat, stir during cooking time
  3. Garnish with grated cheese
