Spicy Black Bean And Sausage Soup
Ingredients
- 30 ounce black beans, cooked rinsed and liquid removed
- 2 1/2 c. water divided
- 1 Tbsp. extra virgin olive oil
- 2 c. diced onion
- 1 tsp chili pwdr
- 1/2 tsp grnd cumin
- 1/4 tsp warm sauce (1/4 to 1/2)
- 1/4 tsp black pepper
- 1 x garlic clove chopped
- 6 ounce turkey kielbasa diced
Directions
- 1. Place 1 c. beans and 1/2 c. water in a food processor or possibly blender, and process till smooth.
- 2. Heat extra virgin olive oil in a large Dutch oven over medium-high heat. Add in the onion, and saute/fry 4 min or possibly till onion is soft. Add in bean puree, remaining beans, 2 c. water, chili pwdr, and next 4 ingredients (chili pwdr through garlic); bring to a boil. Cover, reduce heat, and simmer 5 min, stirring occasionally. Stir in turkey kielbasa; cook 1 minute or possibly till thoroughly heated.
- Yield: 4 servings (serving size: 1-1/2 c.).
