Spiced Walnuts by Carla Hall

- 1 Large Egg white
- 1 Tbl Melted butter
- 4C Walnuts
- 1/2 C Sugar
- 1/4 C Brown sugar
- 1/2 tsp Kosher salt
- 1/2 tsp Ground cinnamon
- 1/4 tsp Cayenne red pepper
Directions
- Preheat oven to 300 degrees
- Line a sheet pan with a silpat or other nonstick silicone baking mat, or parchment paper
- In a large bowl , beat egg white until soft peaks form and stir in the 1 Tbl of melted butter
- Add walnuts and toss gently until well coated
- In a medium bowl combine the sugars, cinnamon, kosher salt and cayenne red pepper mix till well combined
- Sprinkle over the walnuts and mix gently until the nuts are evenly coated
- Spread nuts in a single layer on the baking sheet
- Bake stirring every 10 minutes until golden brown about 45 minutes total
- Place hot baking sheet on a cooling rack and let cool completely
- The cooled nuts will keep in a airtight container for up to 1 week , but are best when fresh
