Ingredients

  • 1 C water
  • 3/4 C chopped green pepper
  • 1/2 C chopped onion
  • 1/2 C chopped celery
  • 1/2 t salt
  • 1 (14oz) can tomatoes, cut up
  • 1-1/4 C long grain rice
  • 1 t chili powder
  • 1/8 t pepper
  • Dash ground red pepper

Directions

  1. In medium saucepan, combine water, pepper, onion, celery and salt. Bring to a boil, reduce heat. Simmer, covered for five minutes. Stir in undrained tomatoes, rice, chili powder, pepper and red pepper. Return to boiling; reduce heat. Simmer, covered, about 20 minutes or until rice is tender and liquid is absorbed.
