Spanish Omelet
Ingredients
- 6 x Large eggs
- 30 gm butter
- 2 Tbsp. vegetable oil
- 1 tsp garlic, crushed
- 2 x onions, medium
- 1 x red capsicum
- 1 x green capsicum
- 3 x tomatoes
- 4 slc ham
- 1 tsp parsley, minced
- 1 tsp basil, minced
- 1/10 tsp cayenne pepper
- salt, pepper
Directions
- Dice onions, capsicum, tomatoes and ham.
- Heat oil in a fry pan and saute/fry garlic, onion, capsicum and ham till soft. Add in tomatoes and herbs, season and set aside to cold.
- Beat Large eggs together and add in onion/tomato mix. Mix well.
- Heat the butter in a non-stick frypan and when bubbling, pour in egg mix and cook over low heat for 2-3 min, stirring, till mix just begins to set. Place pan under grill to just set the top without browning.
- Cut into wedges and serve with fresh tomato sauce and salad.
