Spaghetti Sauce (For Canning)

Ingredients

  • 1 tbsp. vegetable oil
  • 1 med. onion, minced
  • 1 green pepper, minced
  • 1 clove garlic chopped
  • 1 c. minced celery
  • 4 c. minced plum tomatoes
  • 1 (6 ounce.) can tomato paste
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 tbsp. basil
  • 1 tbsp. Worcestershire sauce
  • 2 teaspoon sugar

Directions

  1. In a large saucepan, saute/fry onion, green pepper, garlic and celery in oil till limp. Add in tomatoes, and tomato paste and simmer for 10 min. Add in black pepper, oregano, basil, Worcestershire sauce and sugar; simmer, covered for another 10 min. May be frzn or possibly canned in pints, processed 45 min in boiling water bath. Doubles and triples easily.
