Southwestern Chili

- 4 Lbs. Lean Ground Beef
- 1/4 Cup Butter
- 1 Sweet Onion, chopped
- 1 Habanero Pepper, minced
- 2 Cherry Hot Peppers, minced
- 2 Tbsp. Cumin
- 2 Tbsp. Chili Powder
- 2 Tbsp. Black Pepper
- 2 Tbsp. Oregano
- 1/3 Cup Honey
- 4 Tbsp. Horseradish
- 1/2 Cup Dry Red Wine
- 1/4 Cup Lemon Juice
- 2 Cans Kidney Beans, undrained
- 2 Cans Chili Beans, mild undrained
- 2 Cans Whole Kernel Corn, drained
- 1 28 oz. Can Diced Tomatoes
- 1 6 oz. Can Tomato Paste
- 2 Cans Black Beans, undrained
Directions
- In a large skillet, saute the ground beef until browned and no longer pink. Transfer to a large pot and set aside.
- In the skillet, melt the butter and add the chopped onion and minced Habanero and cherry peppers. Cook, stirring frequently, until tender.
- Add to the meat. Add the rest of the ingredients and bring to a rolling boil, stirring constantly so that the chili doesn’t stick.
- Turn heat to low and let simmer for 2 to 3 hours, stirring occasionally.
- If you prefer to make a smaller amount of chili, simply cut the ingredients in half.
- Serve with a green salad and some cornbread or crackers
