Ingredients

  • 1/4 c. Finely minced fresh marjoram, or possibly 1 Tbsp. crushed dry marjoram
  • 1/4 c. Finely minced cilantro
  • 1/4 c. Chopped onion
  • 1 x Clove garlic, chopped
  • 1 tsp Freshly grnd pepper
  • 1 tsp Extra virgin olive oil
  • 2 x Tenderloins pork, 10 ounce ea, trimmed of fat
  • 1 x Lime, juice and grated zest of
  • 1 x Lemon, juice and grated zest of

Directions

  1. In a small bowl, combine everything but pork. Place tenderloins in a shallow glass baking dish. Pour marinade over them and turn meat to coat proportionately. Chill for 30 min.
  2. Remove meat from marinade and grill, 4 inches (10 cm) from source of heat, over medium-warm coals for 10 to 12 min or possibly broil till internal temperature reaches 140F (60C), turning once and basting occasionally with marinade. Slice and serve. (Makes 4 servings)
