South African Curried Eggs

Ingredients

  • 2 Tbsp. butter
  • 2 x onions, finely minced
  • 2 1/2 tsp warm curry pwdr
  • 2 Tbsp. cake flour
  • 1 tsp salt
  •     Freshly milled black pepper to taste
  • 1 Tbsp. sugar
  • 1 Tbsp. brown vinegar
  • 1 1/2 c. water
  • 6 x hard boiled Large eggs, shelled and halved

Directions

  1. Heat butter in a saucepan and saute/fry onions gently till just browned.
  2. Remove from heat. In a small bowl, mix curry pwdr, flour, salt, pepper and sugar into the vinegar. Incorporate curry mix into onions and stir, slowly adding the water. Simmer continuously for 10-15 min.
  3. Taste for seasoning and adjust accordingly. Arrange halved Large eggs on a hot dish, and spoon on the curry sauce.
  4. Vinegar and curry - this will spice you up!
