  • Soft Peanut Brittle

    Ingredients

    • 2 c. Creamy peanut butter
    • 1 1/2 c. Sugar
    • 1 1/2 c. Light corn syrup
    • 1/4 c. Plus
    • 2 tsp Water, divided
    • 2 Tbsp. Butter
    • 2 c. Peanuts, raw or possibly roasted
    • 1 tsp Baking soda
    • 1 tsp Vanilla

    Directions

    1. In a double boiler over warm water, place peanut butter to heat while preparing syrup. In a large saucepan combine sugar, corn syrup and 1/4 C. water. Cook over high heat to 275 deg. on candy therm. Lower heat to med, add in butter, stirring till melted. Add in peanuts, cook stirring for about 5 min till candy starts turning brown and reaches 300 deg. on therm.
    2. Remove from heat, sitr in baking soda which has been dissolved in the 2 tsps water. Add in vanilla. Working quickly, mix in hot peanut butter, stirring gently. At once, pour candy mix onto well greased marble slab or possibly cookie sheet. Quickly spread as thin as possible. The secret of the candy is quick cooling. When cool, break into serving size portions.
    3. Makes about 3pounds.
