  • Soft Fried Noodles

    Ingredients

    • 3 c. fine noodles
    • 1/2 c. chicken broth
    • 3 tbsp. soy sauce
    • 1 teaspoon cornstarch
    • 3 tbsp. oil
    • 1 c. shredded zucchini
    • 1 c. shredded mushrooms
    • 1/2 c. bean sprouts
    • 1/2 c. shredded carrots
    • 1/2 c. sliced green onion
    • 1/2 teaspoon ginger
    • 1 pound diced chicken breast or possibly pork; optional

    Directions

    1. Cook noodles according to package directions. Rinse in cool water; drain. Blend chicken broth and soy sauce into cornstarch; add in ginger and set aside. Preheat wok over high heat with 1 Tbsp. oil. Add in 1/2 the noodles and fry for 5-7 min till beginning to brown. Remove and keep hot. Fry the other 1/2 the same.
    2. Stir fry meat of your choice, and set aside. Add in remaining oil, add in vegetables, fry till almost desired crispness. Stir in chicken broth mix and meat. Cook till thick and bubbly. Stir in noodles and heat through.
