Soft Boiled Egg on Fried Polenta

- Leftover polenta that has set up overnight
- Soft boiled or poached egg, cooked the way you like it
- 1 or 2T real maple syrup per serving
Directions
- Cut your polenta into 3 or 4 inch squares
- Fry about 5 minutes per side or until golden brown
- Soft boil or poach one egg per square
- To Plate:
- Pour the maple syrup onto the bottom of your plate or bowl
- Place polenta square in center
- Top with egg
- Serve
