Soft Boiled Egg Bowl

Lucky, I can't tire her out, no matter how hard I try. Anyway, I need two days to walk by myself, faster pace and longer distance. So, on the first solo walk of the week, I was thinking of new breakfast ideas. Came up with this breakfast bowl about the halfway point. Easy to make, creamy and filling. I hope you enjoy the bowl. - One slice of your favorite bread
- Cottage cheese - we use 2%, about one-third cup
- Small Avocado
- Six cherry tomatoes
- Soft boiled eggs - two
- (I've been thinking about adding chopped wilted spinach. Maybe next time.)
Directions
- While the eggs are on toast the bread slice, butter and then cut into small squares. Place in bowl.
- Add one third cup of cottage cheese to the bowl.
- Prepare the avocado and scrape into the bowl.
- Rinse the cherry tomatoes and slice in half. Add to bowl.
- Top with the soft boiled eggs.
- This step is my favorite. Break the eggs and mix the ingredients to incorporate all the ingredients.
