Soba Noodles With Spicy Greens And Shrimp
Ingredients
- 12 ounce Japanese soba noodles
- 1 tsp Peanut oil
- 1 tsp Sesame oil
- 4 x cloves Garlic chopped
- 1 tsp red pepper flakes
- 1 1/2 lb Greens Swiss Chard &
- Broccolini
- 1/4 c. Wine vinegar or possibly Mirin
- 2 Tbsp. Low sodium soy sauce
- 1 lb Shrimp
- 1/2 c. Red bell pepper sliced
- 1 med Onion sliced
Directions
- Cook soba noodles and set aside.
- Heat a non-stick wok and spray with Pam. Add in peanut oil and let get warm.
- Addgarlic and red pepper flakes. Stir-fry for 20 seconds. Add in shrimp and cookuntil no longer pink. Remove from wok and set aside. Spray wok again and addgreens, onion and red bell pepper. Stir-fry till veggies are tender. Add in mirin and sesame oil.
- Add in shrimp and noodles to pot with veggies. Add in soy sauce and toss to combine.
- NOTES : I changed quite a few things around. It was very tasty and I'd definitely make it again.
