  • So Simple Pumpkin Cookies

    These cookies are so simple yet so very good. Try them any time of the year.

    Ingredients

    • 1 can (15 1/2 oz.) pumpkin (not the pre-spiced variety)
    • 1 box spice cake mix (Brand of your choice)
    • 1 large egg
    • Walnut or pecan pieces or chopped nuts
    • Frosting
    • 1 8 0z. cream cheese softened
    • powdered sugar or honey or agave syrup (Used to sweeten cream cheese to taste)
    • 1 large mixing bowl
    • spoon or electric mixer
    • cookie sheet
    • cooking spray or parchment paper
    • spatula
    • cooling rack (or parchment paper on a towel on kitchen counter)

    Directions

    1. Preheat oven to 350 degrees F.
    2. Cut parchment paper to fit cookie sheet.
    3. Place cake mix, pumpkin and egg in mixing bowl.
    4. Mix until all ingredients are thoroughly blended.
    5. Place mix on cookie sheet by teaspoon full, making sure there is space between ech cookie for some spreading as it bakes.
    6. Bake at 350 degrees for 10-15 minutes. Cookies will be lightly browned but not crispy. This is a very moist cookie.
    7. Remove cookies from oven and, using spatula, remove them from the cookie sheet and place on cooking rack.
    8. Repeat until all batter is used.
    9. While remqaining cookies are baking, mix cream cheese with powdered sugar, honey or agave syrup until smooth and creamy, tasting until desired sweetness is achieved.
    10. When cookies are cool, frost with a dollop of cream cheese mix and top with a pecan or walnut quarter, or chopped nuts.
