SNOW WHITE STRAWBERRY JELLY

This is a lovely little jelly snack, morning tea or dessert that uses agar to set.I came across this recipe in Asia that uses egg whites and although this recipe has strawberries,you can use your favorite tinned or fresh fruit.This is the perfect dessert after a hot spicy Thai dinner.Great as a summer dessert.

Ingredients

  • 5g agar - agar strands(about 30 strands)
  • 1 cup water
  • 1 1/2 cups sugar
  • 2 egg whites
  • 1 tsp grated lemon rind
  • 1 tbsp lemon juice
  • 1/2 punnet( 250 g) strawberries

Directions

  1. Cut and place agar agar strands into small pieces and place in pan with water,stand for 30 mins.
  2. After 30 mins,stir agar agar mixture over heat,without boiling,until it dissolves-about 10 mins.
  3. Strain it through muslin cloth,return to pan,add sugar,stir over heat,without boiling,until sugar dissolves.Cool to room temp.
  4. Beat egg whites in small basin with electric mixer until firm peaks form,gradually add agar agar mixture in thin stream while mixer is operating.
  5. Beat in lemon juice and rind until thick and spread into lightly greased cake tin.
  6. Press strawberries into mixture,smooth top.
  7. Refrigerate several hours or until set.
