Smoked Trout Cakes With Horseradish Cream

Ingredients

  • 1 1/2 c. flaked smoked trout meat
  • 2 Tbsp. minced green onion
  • 2 tsp capers, liquid removed and coarsely minced
  • 1/2 tsp grated lemon peel (yellow part only)
  • 1/4 tsp freshly grnd pepper
  •     Salt to taste
  • 1 lrg egg, lightly beaten
  • 1/4 c. whipping cream
  • 1 c. fresh bread crumbs from French bread (divided)
  • 2 Tbsp. or possibly more vegetable oil
  •     Horseradish Cream (recipe follows)

Directions

  1. Combine trout, green onion, capers, lemon peel and pepper in a medium bowl.
  2. Season with salt. Stir in egg, cream and1/2 c. bread crumbs to blend.
  3. Form mix by1/4 cupfuls into eight 1/2 inch-thick cakes.
  4. Place remaining1/2 c. breadcrumbs in a shallow dish. Roll cakes in breadcrumbs, coating completely.
  5. Heat 2 Tbsp. oil in a large skillet over medium heat. Working in batches, cook fish cakes till golden, about 3 min per side. Add in more oil as necessary. Serve with Horseradish Cream.
