Smoked Salmon Nicoise Salad
Ingredients
- 8 slc smoked Scottish salmon
- 8 x cherry tomatoes quartered
- 1/4 x cucumber sliced
- 4 x black olives halved
- 6 ounce french beans. cooked lightly
- 2 x spring onions minced
- 2 x hardboiled Large eggs quartered2
- tablespns french dressing
- 1 x tablespn parsley minced
Directions
- In a bowl toss the tomatoes cucumber beans spring onion and parsley in the dressing a!ong with half the salmon cut into bitesize pcs.
- Pile neatly onto each plate interspersing with egg.
- To finish off this delightful starter decorate with a flourish using the other half of the salmon.
