Smoked Salmon Hash

- 3 T. bacon or sausage grease (or butter)
- 3 c. leftover cooked, cubed potatoes- any kind
- 1 c. chopped onion
- 1/4 c. heavy whipping cream
- 1 to 1-1/2 c. hot-smoked salmon, flaked
- 3 t. fresh dill, chopped
- 2 t. paprika
- salt and pepper to taste
Directions
- In a large skillet over medium heat sauté potatoes and onion in bacon grease, until they begin to brown, about 10-12 minutes. Add cream to skillet. Increase heat a bit and cook until most of cream is absorbed and mixture is still moist, stirring often, about 3 minutes. Stir in salmon, dill, paprika, and season with salt and pepper. Serve topped with 2 or three eggs- fried or poached to your liking.
