Slow Cooker Beef Stew

- 1-1/2 pounds lean stew meat
- 3 potatoes (small white)
- 2 carrots
- one onion
- 2 cups beef broth
- 2 tablespoons tomato paste
- one tablespoon corn starch
- one bay leaf
- S & P to taste
Directions
- Sear the stew meat in olive oil, s & p, transfer to the slow cooker, add cut onion, small potatoes (peeled) peeled and cut carrots, bay leaf, broth, tomato paste, corn starch and stir well, cover, cook on low 4 hours.
- We love this stew with biscuits and warm butter.
