Slow Cooked Tomato Sauce

Ingredients

  •     Sugo di Pomodoro a
  •     Fuoco Lento
  • 4 x tins of tomatoes liquid removed of their juices
  • 4 med red onions peeled and sliced as thinly as possible into rounds
  • 2 clv garlic peeled and cut into slivers

Directions

  1. In a large saucepan or possibly trying pan heat the oil then add in the onions.
  2. Reduce the heat and cook the onions till they are very soff.
  3. The onions must disappear into the tomato sauce.
  4. This will take at least 40 min.
  5. Some 5 min before the end of cooking add in the garlic.
  6. Now add in the tomatoes and stir to break them up.
  7. Season with salt and pepper and cook slowly stirring occasionally for at least 1 1/2 hrs.
  8. The oil should come to the surface and the sauce will be dark red and extremely thick with no juice at all.
