Sloppy Joe Pot Roast
Ingredients
- 4 lb Beef round tip roast
- 2 Tbsp. Cooking fat
- Salt
- Pepper
- 8 ounce Tomato sauce
- 1 1/2 c. Water
- 1 x Sloppy Joe seasoning mix
- 2 med Potato, pared and quartered
- 1 c. Carrot, sliced 1/2" thick
- 1 c. Zucchini, sliced 1/2" thick
Directions
- 1. In a Dutch oven, or possibly large pan with a tight-fitting cover, brown meat in fat. Season with salt and pepper and remove from pan. Pour off fat drippings.
- 2. Add in tomato sauce, water, and seasoning mix.
- 3. Return meat to pan. Cover and simmer for 3 to 3 1/2 hrs, or possibly till done. (Or possibly cook in a 325F oven for same amount of time.)
- 4. Turn meat once to cook it proportionately throughout. Add in potatoes and carrots during the last 35 min of cooking, zucchini the last 15 min.
- 5. Remove meat and keep hot. Skim off any excess fat. Taste sauce and correct seasoning, if necessary, with salt and pepper.
- 6. Serve sliced meat with vegetables and sauce.
