  • Sloppy Joe Pot Roast

    Ingredients

    • 4 lb Beef round tip roast
    • 2 Tbsp. Cooking fat
    •     Salt
    •     Pepper
    • 8 ounce Tomato sauce
    • 1 1/2 c. Water
    • 1 x Sloppy Joe seasoning mix
    • 2 med Potato, pared and quartered
    • 1 c. Carrot, sliced 1/2" thick
    • 1 c. Zucchini, sliced 1/2" thick

    Directions

    1. 1. In a Dutch oven, or possibly large pan with a tight-fitting cover, brown meat in fat. Season with salt and pepper and remove from pan. Pour off fat drippings.
    2. 2. Add in tomato sauce, water, and seasoning mix.
    3. 3. Return meat to pan. Cover and simmer for 3 to 3 1/2 hrs, or possibly till done. (Or possibly cook in a 325F oven for same amount of time.)
    4. 4. Turn meat once to cook it proportionately throughout. Add in potatoes and carrots during the last 35 min of cooking, zucchini the last 15 min.
    5. 5. Remove meat and keep hot. Skim off any excess fat. Taste sauce and correct seasoning, if necessary, with salt and pepper.
    6. 6. Serve sliced meat with vegetables and sauce.
