  • Sloppy Joe on a Bun

    Ingredients

    • 2 qts onions, finely chopped
    • 2 qts celery, finely chopped
    • 1 cup vegetable oil
    • 21# ground beef
    • 2 1/2 gal tomato sauce
    • 4 cups catsup
    • 2 Tbsp salt
    • 2 tsp pepper
    • 1 tsp thyme, ground
    • 2 Tbsp basil
    • 100 each hamburger buns

    Directions

    1. Fry onions and celery in oil in stock pot until onions are golden.
    2. Add ground beef to vegetables; cook and stir over moderate heat until meat is broken up and well browned.
    3. Drain meat and vegetables well in a colander. Discard fat. Return meat and vegetables to stock pot.
    4. Add tomato sauce, catsup, salt, pepper, thyme, and basil to the meat. Simmer, uncovered, stirring frequently, for 20-25 minutes.
    5. Portion 1/2 cup sloppy joe on each bun.
